INGREDIENTS:

  • 1/2 kilo Pork Belly

  • 4 cups Water

  • 1/2 tablespoon Salt

  • 1 tablespoon Light soy sauce

  • 1 tablespoon Whole Black pepper

  • 4-5 pieces Bay leaves

  • 2 tablespoons Salted butter

  • 1 tablespoon Light soy sauce

  • 2-3 tablespoons Calamansi juice

  • 1-2 pieces Onion

  • 2 pieces Green chili

  • 5 pieces Red chili

  • 1-3 tablespoons Mayonnaise

  • 1 piece Egg (medium)


DIRECTIONS:
Step 1:
In a pot, combine water, pork belly, salt, light soy sauce, bay leaves, and whole black pepper. Bring the mixture to a boil and cook until the pork is tender, approximately 15-20 minutes (adjust cooking time if needed). Drain the pork and allow it to air dry.

Step 2:
Preheat an air fryer or use a grill/oven as an alternative cooking method. Place the pork belly in the air fryer/grill/oven and cook for 10 minutes on each side. Remove the cooked pork belly and cut it into small pieces. Set aside.

Step 3:
Melt the butter in a pan and sauté the onions until they become translucent. Add the chopped pork belly to the pan and mix well. Pour in the light soy sauce, give it a quick stir, and then add the green and red chilies. Add the mayonnaise to the pan, mix everything together, and set aside.
Note: Mayonnaise can be added according to personal preference.
Step 4:
In a smaller pan or sizzling plate, melt some butter, transfer the cooked pork belly to the pan, and crack an egg over it. Mix the pork belly and egg together until the egg is fully cooked. Add the calamansi juice to the pan and mix everything together.
