INGREDIENTS:

  • 1 kilo Chicken (whole)

  • 3-4 heads Garlic (pounded)

  • 2 teaspoons Garlic powder

  • 2 teaspoons Black pepper (cracked)

  • 2 teaspoons Salt

  • 1 teaspoon Rosemary or thyme

  • 2 teaspoons Calamansi or lemon juice

  • 1 tablespoon Butter

DIRECTIONS:

Step 1:

Clean the whole chicken thoroughly, removing any giblets and excess fat. Pat it dry with paper towels and let it sit while you prepare the other ingredients.


Step 2:

Pound the garlic cloves lightly just to break them open and release their flavors. You can keep the thin skin on the garlic cloves as it will add extra flavor to the chicken.


Step 3:

In a small bowl, mix the garlic powder, cracked black pepper, salt, and rosemary or thyme until well combined.


Step 4:

Rub the calamansi or lemon juice all over the chicken, inside and outside. This helps to remove any unwanted fishy smell from the chicken.


Step 5:

Rub the mixture of garlic powder, black pepper, salt, and rosemary or thyme thoroughly both inside and outside of the chicken, ensuring it's evenly coated.


Step 6:

Stuff the chicken with the pounded garlic. You can also spread some garlic cloves on the chicken's wings, making sure they are not too exposed to avoid burning during cooking.


Air Fryer Instructions:

Step 1:

Air fry the chicken at 180°C (356°F) for 30 minutes, breast-side down.


Step 2:

After 30 minutes, carefully flip the chicken, breast side up. If desired, add a tablespoon of butter on top of the chicken.


Step 3:

Continue air frying the chicken for another 20 minutes or until the skin turns golden brown.


Baking Instructions:

Step 1:

Roast the chicken in the preheated oven at 180°C (356°F) for 45 minutes.


Step 2:

After 45 minutes, carefully flip the chicken, breast side up. If you prefer, you can add a tablespoon of butter on top of the chicken at this point for added flavor and moisture.


Step 3:

Continue baking the chicken for another 20 minutes or until the skin turns golden brown.
