Ingredients:
1 kilo Chicken leg quarter or chicken thigh
3 pcs Lemons (2pcs for juice, 1pc for garnish)
¼ cup Olive oil or melted butter
⅛ cup Water
1 whole Garlic (grated)
1 whole Garlic (peeled bulbs optional)
1 tbsp Salt
1 tsp Black ground pepper
1 tsp Paprika
1 tsp Rosemary (dried)
1 tsp Oregano or thyme (dried)
1 tsp Red pepper flakes (optional for additional kick)
Lemon zest (optional)
Potatoes (optional)
Directions:
Step 1:
Rinse the chicken, then pat them dry using a paper towel, then place the chicken in a baking dish.
Step 2:
Squeeze the juice from 2 lemons and set aside. In a separate bowl, combine salt, black pepper, paprika, dried rosemary, dried thyme/oregano, red pepper flakes (optional), and grated garlic. Mix well to create the flavorful spice blend.
Step 3:
Arrange the pat-dried chicken in a pan. Pour in the lemon juice and add the prepared spice blend to the chicken, massaging it thoroughly to allow the chicken to absorb the aromatic spices.
Step 4:
Add optional potatoes for a complete one-pan meal. Ensure the potatoes are coated in the marinade. You can also top the chicken with additional rosemary, garlic cloves or bulbs, and lemon zest for an extra burst of flavor. Pour in the water and place lemon slices on top of the chicken.
Step 5:
Preheat the oven to 200°C (392°F) for 15 minutes while the chicken is marinating.
Step 6:
Bake in the preheated oven for 45-60 minutes or until the chicken is golden brown and cooked through, and the potatoes are tender.
Tips:
Chicken Temperature and Basting: To achieve juicier and more evenly cooked chicken, allow the chicken thighs to come to room temperature for about 20-30 minutes before cooking. During roasting, consider basting the chicken with the pan juices a couple of times. This not only keeps the chicken moist but also adds extra flavor.
Marinating Time: While 15 minutes of marinating is the minimum, if you have the time, marinating for a few hours or even overnight in the refrigerator will infuse more flavor into the chicken.
Use Fresh Herbs: If you have fresh oregano and rosemary, feel free to use them instead of dried herbs. Fresh herbs provide a more intense flavor to your dish.
Crispy Skin: For extra crispy skin, start by roasting the chicken at a slightly higher temperature (around 220°C/430°F) for the first 15 minutes, then reduce the temperature to 200°C/392°F for the remainder of the cooking time.
Customize Flavors and Sides: Experiment with other citrus fruits like oranges or limes to create variations of this recipe. You can also add a dash of honey for a touch of sweetness. Consider serving your Roasted Lemon-Garlic Chicken with delicious side dishes like roasted vegetables, mashed potatoes, or a fresh green salad to create a complete meal.
Leftovers: Roasted Lemon-Garlic Chicken makes fantastic leftovers. You can shred the leftover chicken and use it in sandwiches, wraps, or salads for a quick and tasty meal the next day.
Serve & Enjoy! 💖
