Ingredients:

4 pcs Egg Yolks

¼ tsp Salt

1 tsp Vanilla extract

¾ cup Condensed milk or ½ cup Sugar

1 cup Evaporated milk

2 tbsp Cornstarch

1 tbsp Ube powder

1 cup Cheese (grated)

1 pack Graham crackers

Milk or water for dipping graham crackers

Drops of Ube flavoring (optional)

Directions:

Step 1:

Start by combining 4 egg yolks, ¼ teaspoon of salt, vanilla extract, and condensed milk in a pan, mixing until well combined.

Step 2:

Incorporate the evaporated milk into the mixture, then sift in cornstarch, ube powder. Stir until the mixture is smooth and free of lumps. Add drops of ube flavoring if needed.

Step 3:

Switch on the heat, stirring continuously until the mixture reaches the desired thickness. Turn off the heat and allow the ube custard to cool completely in the refrigerator.

Step 4:

Assemble the layers by dipping graham crackers into either milk or water and arranging them at the base of a pan. Proceed to layer the graham crackers with the ube custard, ensuring each layer is not excessively thick, and sprinkle some shredded cheese. Add another layer of graham crackers on top and repeat the process, creating as many layers as desired.

Step 5:

On the final layer, add ube custard, about 1 to 2 inches, spreading it evenly, and sprinkle cheese on top.

Step 6:

Chill in the fridge overnight or for at least 4 hours in the freezer before serving.

Tips:

  • Experiment with different graham cracker variations, such as flavored or cinnamon-infused ones.

  • Adjust the sweetness by modifying the amount of condensed milk or sugar used.

  • For a richer flavor, try adding a layer of ube halaya between the graham cracker layers.

  • Serve chilled for a refreshing and delightful treat.

Serve & Enjoy! 💖
