INGREDIENTS:

  • 1/2 kilo Pork skin

  • 2-3 pieces Bay leaves

  • 1 teaspoon Whole peppercorn

  • 1 tablespoon salt

  • 1 cup Vinegar

  • 2 pieces Salted egg

  • 1 piece Onion

  • 2 pieces Green chili

  • 2 pieces Red Chili

  • 1/4 cup Crushed peanuts

  • 1/2 teaspoon Salt

  • 1/2 teaspoon Ground black pepper


DIRECTIONS:
Step 1
Thoroughly clean the pork skin by rinsing it under running water.

Step 2

In a pot, add enough water to cover the pork skin. Add the cleaned pork skin, bay leaves, whole peppercorns, and salt to the pot. Bring the water to a boil and let it simmer for 20-30 minutes or until the pork skin becomes tender. Be careful not to overcook it.


Step 3

While the pork skin is boiling, chop the salted egg, onion, green chili, and red chili into small pieces. Crush the peanuts into smaller bites.


Step 4

Once the pork skin is tender, remove it from the water using a slotted spoon or a strainer. Let it drain and cool for a few minutes, then slice the boiled pork skin into bite-sized pieces


Step 5

In a large bowl, combine the sliced pork skin, vinegar, chopped salted egg, onion, green and red chilies, and crushed peanuts.  Thoroughly mix the ingredients together. Season with salt and ground black pepper.

Note: Taste the mixture and adjust the flavors as needed by adding more salt or vinegar.


Step 6

Once you've achieved the desired taste, let the flavors meld together by covering the bowl and allowing it to marinate in the refrigerator for at least 30 minutes before serving.
