INGREDIENTS: 

  • 3 pieces Chicken Breast

  • 6 cloves Garlic (minced)

  • ¼ teaspoon Ground black pepper

  • 1 tablespoon Calamansi juice (lemon juice)

  • ¼ cup Soy sauce

  • 1 piece egg (beaten)

  • Oil for frying

Breading:

  • 1 cup All-purpose flour

  • ½ cup Cornstarch

  • 1 teaspoon Garlic powder

  • 1 teaspoon Salt

  • 1 teaspoon Paprika powder

Additional:

  • 2 cups Cold water

  • Ice cubes


DIRECTIONS:

Step 1: Prepare Ingredients

  • Slice the chicken breasts into bite-sized cubes.

  • Mince the garlic and set aside.


Step 2: Marinate Chicken

  • In a bowl, combine the chicken cubes, minced garlic, ground black pepper, calamansi juice, and soy sauce.

  • Mix well to ensure all pieces are coated.

  • Cover the bowl and let it marinate in the refrigerator for at least 30 minutes to 1 hour.


Step 3: Prepare Breading Mixture and Cold Water

  • In a separate bowl, combine the all-purpose flour, cornstarch, garlic powder, salt, and paprika powder.

  • Mix well until all ingredients are evenly distributed.

  • Prepare a separate bowl with cold water and ice cubes. Add more ice cubes if necessary.


Step 4: Combine Egg and Chicken

  • In another bowl, beat the egg until well-mixed.

  • Remove the marinated chicken from the fridge and discard the marinade. 

  • Add the marinated chicken to the beaten egg, and mix well until thoroughly combined.


Step 5: Coat the Chicken

  • Coat each chicken cube thoroughly with the breading mixture.

  • After the first coat, dip the chicken cubes into the cold water with ice for 30 seconds, then coat the chicken again with the breading mixture for an extra crispy texture.


Step 6: Fry the Chicken

  • Heat oil in a deep frying pan over medium-high heat.

  • Once the oil is hot, carefully add the coated chicken cubes.

  • Fry until golden brown and crispy, about 5-7 minutes per batch.

  • For an even crispier texture, perform a second fry. Remove the chicken from the oil, let it rest for a few minutes, and then fry again for an additional 2-3 minutes.

  • Remove the chicken pops from the oil and place them on a paper towel-lined plate to drain excess oil.
