INGREDIENTS: 

  • 1 cup Shredded cabbage

  • ½ cup Shredded carrots

  • ½ - 1 cup Apple slices (optional)

  • ¼ cup Pickled relish

  • ½ cup Mayonnaise

  • 1 tablespoon Lemon or calamansi juice

  • 1 tablespoon Sugar or honey (to balance acidity)

  • Pinch of salt and pepper, to taste


DIRECTIONS:

Step 1: Prepare the Vegetables

  • In a large mixing bowl, add the cabbage, carrots and pickled relish.

  • If using apple slices, chop them into thin pieces and add them to the bowl with the cabbage, carrots and pickled relish.


Step 2: Make the Dressing

  • In a separate small bowl, combine together the mayonnaise, lemon juice or calamansi juice, sugar or honey to balance the acidity.

  • Season with a pinch of salt and black pepper.

  • Mix well until combined.


Step 3: Combine and Mix

  • Pour the dressing over the cabbage and carrot mixture, mix thoroughly until all the vegetables are well-coated.


Step 5: Adjust and Chill

  • Taste and adjust seasoning, adding more salt, pepper, or lemon juice if needed.

  • Chill the coleslaw in the refrigerator for at least 30 minutes to allow the flavors to meld and the texture to firm up.
